We use only carefully selected meats for our pancettas and cured pork necks plus salt and aromas from ancient recipes.  Production processes remain those of the past with most procedures done by hand by master craftsmen.  Everything aims at maintaining the natural and typical flavor and the characteristic white-streaked pink color intact to achieve a perfect balance between softness and consistency of each slice.
